This root vegetable comes in may colors from gold to red and white. This year, we have the Bulls red beets and gold beets.
HOW DO YOU STORE IT?
Unwashed- in the refrigerator in a plastic bag. The leaves last only a few days but the root lasts for several weeks in a dark, dry location.
In season in the summer months from May to September.
WHY SHOULD YOU EAT IT?
One cup of beets contains lots of folate
(B9), manganese, and potassium among other nutrients. And when it comes to fiber, beets have over 3 gms in each cup.
They can be roasted at 400 degrees for 45 minutes and top with olive oil, feta, and balsamic vinegar.
We also do a quick pickle with vinegar, salt, cloves, and allspice. Another way to really enjoy the flavors and stamp down the “earthiness” is to roast them after lightly coating with olive oil. The skins will slip right off when done.
